Mexico Pacamara/Gesha Honey
This unique blend of Gesha and Pacamara from Carlos García's Finca El Rincón offers a great opportunity to explore how coffee processing techniques and terminology vary across origins. While classified as a Honey process in Mexico, the methods used here would more commonly be described as semi-washed in other producing countries. It's a reminder that a producer's intention, approach, and local traditions don't always fit neatly into familiar processing categories, and that the story behind a coffee often goes much deeper than its label.
