Guatemala Red Pacamara Anaerobic In Cherry Washed
This Pacamara microlot from Finca Santa Sofia is processed as an Anaerobic in Cherry Washed, combining Guatemala’s traditional washed methodology with an intentional anaerobic fermentation stage to increase aromatic intensity and structure. Freshly harvested cherries are placed into sealed containers to ferment without oxygen, creating an environment that enhances fruit expression, acidity, and body. After the anaerobic stage, the coffee is depulped and fermented for a controlled period typically between 12 and 48 hours depending on conditions before being fully washed to remove mucilage. The coffee is then dried on patios and raised beds until stable, allowing the impact of the anaerobic fermentation to remain present while preserving the clarity and structure of a washed coffee.
