This lot undergoes a carefully monitored natural aerobic process, beginning with meticulous cherry selection for high sugar content before being placed in thick layers to ferment for a week. Once the initial fermentation is complete, the cherries are spread thin to finish drying over 20–30 days, resting up to 60 days until export. The result is a coffee that captures the vibrancy of its terroir with a delicate and expressive cup profile, offering bright layers of pomegranate, jasmine, strawberry, and blackberry. Oscar and Francisca Chacón, third-generation producers and pioneers of Costa Rica’s micromill revolution, continue to redefine quality and innovation with coffees like this proof of their legacy of resilience, creativity, and uncompromising passion.

About the farm: This is a natural aerobic process, where once the cherries are harvested, they are transferred to the mill for their classification, where only those with a high percentage of brix degrees are chosen. After this they are transferred to the greenhouse patio for their dehydration. During the first week the cherries are placed in a thick layer, in order to ferment aerobically. After this first week the coffee is spread in a thin layer until the drying process is finished

We pack all orders and then ship them out at 9 AM on Monday through USPS. For international orders, we use DHL, which ships at 11 AM on Monday.
