COLOMBIA WUSH WUSH SEMI-WASHED
Grown at high elevation in Huila’s Palestina region, this semi washed Wush Wush from El Roble Negro showcases a delicate fermentation aimed at preserving the variety’s inherent elegance. Producer Jaime Nuñez Escudero ferments the cherries for 48 hours in whole-fruit form, followed by another 48 hours after depulping all done dry before sun drying. The result is a remarkably clean cup with layered notes of florals, blackberry, ripe mango, and toffee. This lot is a vibrant example of how minimal intervention can still deliver depth and complexity.

How did you come into working in coffee?
We’ve been working on my father’s farm for over 15 years, and I now manage all the processing myself. We grow more than 16 different coffee varieties on the farm, with approximately 16 hectares planted with coffee. The Wush Wush variety grows very well here, and we prefer to use a fermentation process that is not too aggressive, in order to obtain a clean cup and highlight the variety’s natural flavor notes. Depending on the variety, we also do natural or honey processes. We enjoy experimenting and seeking the best flavor profiles our clients are looking for. Personally, I grew up in coffee, and I can’t see myself doing anything else. We’ve managed to move forward with the farm and this project. Thanks to God, we already have several clients interested in our coffees, and we’re looking to keep growing and strengthening these types of partnerships..
