COLOMBIA SIDRA NATURAL DOUBLE FERMENTATION

This naturally processed Sidra from La Molienda in Huila is the result of precise technique and deep generational knowledge. Producer Luis Orlando Sánchez applies a 120 hour sealed bag fermentation before sun drying the coffee on a covered patio for 20 days. The result is a crisp and refined cup with layered notes of lime, black tea, currant, and caramel. With 12,000 Sidra trees and a growing legacy of quality, this lot represents a balance of tradition and innovation rooted in Colombia’s coffee heritage.

Producer Q & A

How did you come into working in coffee?

I am Luis Orlando Sánchez, a second-generation coffee grower, and I’m already training my eldest son to carry on this work. My father was also a coffee farmer, and for several years now we have been focusing on specialty coffee. We have completed several trainings and have been working with natural processing methods for some time, achieving very good results. We are passionate about the countryside, and being able to make a living from it now brings us great joy. Specialty coffee is something we are truly passionate about and deeply proud of. We come from a coffee-producing country, and it’s important to preserve that tradition. We work hard to achieve better income, which is why we focus on quality. We aim for long-term relationships and are committed to producing coffees that consistently meet high standards.
