Colombia Peach Co-Fermentation Dried Honey
This experimental coffee offers a unique and vibrant flavor profile, showcasing the sweetness of peach and lychee, complemented by the richness of baker's chocolate and a bright citric acidity. Processed using a pre-fermentation stage of 24 hours in plastic bags, followed by 24 hours of aerobic fermentation in cherries, the coffee is then depulped and co-fermented with dehydrated fruits to enhance its flavor concentration. After 5 days of anaerobic fermentation, the coffee is mechanically dried for 10 days, with an additional 5-day stall to retain and intensify the flavors.

We pack all orders and then ship them out at 9 AM on Monday through USPS. For international orders, we use DHL, which ships at 11 AM on Monday. Tracking information is sent to your email. Producer Q & A
How did you come into working in coffee?
Arnubio (Brayan’s father) tells us that Brayan Estiven started in the coffee business at the age of thirteen, buying and selling coffee cherries. From this early age, he began to learn about cultivation and harvesting and later began to weave this project "Colors and Flavors", which has the purpose of taking coffee beans to another level of specialty and giving the product a superior value. In this way, the idea arises from the traditional understanding of coffee growers who work without achieving a real benefit for the work they do.
What makes this harvest or lot different from others?
With the Forest Coffee partnership, we created an amazing profile which for most of the people it’s very new and different, you can feel exactly the profile that we are working on.
What would you say separates your coffee from others?
I think all the coffees in the world are different due to natural factors, including microclimate, altitude, soil nutrients available, genetics, and many others. But for our farm specifically, we have a big focus on processing, which has helped us to develop unique profiles that are not often seen in the market.
What does your day consist of managing the farm or farms?
Brayan’s days are always different, most of his time, he is visiting his partners making sure that the coffee will meet the physical parameters to be able to use in the Colors and Flavor project. He just become a dad 4 months ago so his days are changing, he says that his kid is taking a lot of his time, so basically he’s managing the project remotely and whenever a coffee needs to be delivered he travels to Arnubio’s farm to make sure the coffee is in good condition.
What opportunities are you looking for from people who buy your coffee or work with you currently?
We want to be able to create a better culture of coffee through good processing methods, which are then showcased by roasters with the same focus on quality. At the same time, we want to become pioneers in the coffee industry by having an impact not only on our coffees but also with all the other coffee growers.
Where does your sense of passion for coffee come from?
It all began out of the necessity to make the family business work, after some time it is inevitable to start loving the product that you put your effort on, “it has given me and my family the means to keep dreaming of a better future” Brayan says
