La Joya is both the farm and micro mill, allowing Gloria and Samuel to closely manage every stage of production, from variety selection and harvest through fermentation, drying, quality evaluation, and stabilization.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eFor this lot, ripe Yellow Caturra cherries underwent La Joya’s Star Platino Natural process, beginning with 240 hours of controlled fermentation. The coffee was then dried for 25 days inside a forced-ventilation tunnel, where temperatures ranged from 19–30.2°C, before resting for 120 days of stabilization. The result is a highly intentional natural process built around control, observation, and understanding how each stage influences the final coffee.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWhat makes La Joya especially meaningful to us is the relationship behind the coffee.
